Der Baum hat weiß bis rosafarbene Blüten, aus denen die grünen, rundlichen Früchte entstehen. Diese bestehen aus einer harten Schale, die zwei harte, steinartige Früchte enthält. Ausgewachsene Bäume tragen 35-45 kg Früchte pro Jahr. Das Öl wir durch Extraktion, Heiß- oder Kaltpressung gewonnen und danach schonend filtriert und gereinigt oder raffiniert. Das Öl hat eine hellgelbe bis orange Farbe und einen säuerlichen, grasigen und teilweise chemischen Geruch. Es zeichnet sich durch seinen hohen Gehalt an ungesättigten Fettsäuren, wie der Linol- oder der Linolensäure, mit bis zu 90% aus. Es ist damit eines der Öle mit dem höchsten Fettsäureanteil.
